  1. Get Turkey gizzards, turkey neck, popes nose, turkey drippings, one coarsely chopped onion, 12 cup celery leaves, salt, pepper, garlic to taste and two tsps of chicken powder

Steps to make Turkey Gravy:
  1. Combine all ingredients in a pot, bring to a boil. Turn down heat and simmer for 4 hours adding more water / seasoning if needed. After 4 hours add the turkey juice from the roast pan you cooked the turkey in.
  2. Remove from heat, use a large strainer and strain all the liquid from the gizzard pot into a clean pot. This will leave you with a clear liquid broth. Season if necessary. Bring to a boil and thicken with a corn starch slurry.
